In 2004, he transitioned to consultancymost notably in Priorat, Spainwhich deepened his passion for Italian and Spanish wines. In 2006, together with Narelle, he launched Tar and Roses to demonstrate how these classic varietals can thrive across Central Victoria's diverse terroirs.
