They are then cold smoked at temperatures below 90F to enhance the natural flavors without overpowering the delicate fish. The fillets are then enrobed with a fruity olive oil that pairs so well with the dill and fennel to produce an exceptional tin of fish. Makes a perfect picnic addition. Serve with crackers or crusty bread
