Sparkling wines, from Cava to Champagne, are now an integral part of the wine world. However, it all began in the south of France, in Languedoc Roussillon, near the village of Limoux. In 1531, the very first sparkling wine was discovered and produced at the Abbey of Saint Hilaire. It was called "Prima Perla." A name that is still inextricably linked to sparkling wines.
